Tomorrow I am taking Chocolate Chip Cookies to work for my co-workers. I wanted to try a new cookie recipe because I have been using the same one for over 4 years since I first started baking vegan goodies.
Chocolate Chip Cookies
1/2 cup brown sugar
1/4 cup white sugar
2/3 cup canola oil
1/4 cup unsweetened soy milk
1 tablespoon tapioca flour
3 teaspoon vanilla extract
1-1/2 cups all purpose flour
1/2 teaspoon baking soda
3/4 cups chocolate chips
Pre-heat oven to 350F.
Lightly grease 2 large baking sheets
Mix together sugars, oil, milk and tapioca in a mixing bowl (mix very well)
Add vanilla extract
Add flour, soda and mix until well incorporated.
Fold in chocolate chips
Rolls cooks into a ball by hand and flatten out on baking sheet
Bake cookies for 6 mins if small cookies and 8 mins if larger cookies
I’m back to blogging. I’m not sure if anyone still reads this blog, but I wanted to let anyone who does read my blog know what is coming. In the next few weeks I plan to make at least one post a week in which I prepare an item from one of my favorite cookbooks. I have way too many cookbooks and some of them I have never prepared a recipe out of. I’ll include any variations I make to the recipe as well as information on the cookbook the recipe came from.
